maintaining a happy stash
1)
Remove stash and gently stir to blend the hooch back into the starter.
If jar is more than half full, measure & remove 1/4—1/2 cup of your
starter and discard. This allows room for the fresh feed.
2)
In a small bowl, mix 1/4—1/2 cup all-purpose flour with equal parts
water,. Briefly blend until incorporated and pour into the stash jar.
Give it a couple stirs to distribute.
3)
Return the jar to the refrigerator, leaving the lid loose to allow
gasses to escape. After a day or two, you can tighten your lid back
down.
5)
Log date to keep track of feedings. Periodically transfer your mother
stash into a clean container as needed to prevent contamination. Always
use clean utensils and avoid touching, or introducing anything foreign
into the starter, as this increases the risk of it spoiling.
For
best results, feed weekly. If jar is near full, remove some stash to
make room for the feed and discard it. Replace it with equal amount of
food. EX: if you remove a 1/2 cup stash, feed it 1/2 cup flour & 1/2
cup water. You can give your stash a little boost if you set it out and
allow it to reach room temperature before adding the flour & water.
Then let your starter sit out an additional 2-3 hours as the yeasts
become more active. After which you can return it to the fridge for
storage.
